Bought the 30L sized one as the 15L was out at the time and didn't want to wait. Best thing I could have done. Started curing/brining chickens and turkeys for roasting and poultry hams and used fresh pork sides to make bacon. Fantastic results! No weird smell or white scum formed. The water seal produced ideal conditions for my needs. Plan to start making other kinds of pickles and cure more meats. Having great fun finally having a container I can trust using for preserving foods. Plan also on getting the other sized (15L - 10L - etc.) fermenting crocks so I can make different cures and batches at the same time. I am getting really ambitious now that I have this.
