10-Minute Vegan Chocolate Mousse (from LookbookCookbook)

Silky, creamy, chocolatey, gluten-free, and vegan. Yum. Serves two.

3/4 cup canned coconut milk
1/2 cup dark chocolate chips
1 tablespoon pure maple syrup or agave
1 tablespoon vanilla extract

Shake the can of coconut milk before you open it–coconut milk usually separates somewhat in the can. Mix coconut milk and chocolate chips in a saucepan, and simmer over medium-low heat, stirring to make sure the chocolate chips are melting.

Turn down the heat and add the maple syrup/agave and vanilla extract. Keep stirring until the chocolate is completely melted.

Remove from heat and let cool for a couple of minutes. Pour into two pretty glasses and refrigerate for a few hours until it thickens up.

Antioxidant-Powered Red Wine Smoothie

Boozy and antioxidant? Sign me up! You can use fresh or frozen berries with this recipe. If you use fresh, throw in a handful of ice to get that smoothie consistency, and add a bit more wine to counteract the ice.

1/2 cups red wine
1 cup strawberries
1/2 cup raspberries
1/2 cup blackberries
Agave or honey to taste
and IF YOU’RE FEELING SASSY: a handful of greens

Blend all ingredients together. Taste–is it sweet enough? Too tart? Add more agave or honey. Boozy enough? Splash in more wine. No judgment here.

If you wanted to top with a few shavings of dark chocolate, I think everyone would be cool with that.
