Herbal Green Smoothie: ParsleyYou’ve seen in on your plate at the local steakhouse. You’ve seen it lurking limply on the edge of your omelet. But today, parsley’s not just a garnish anymore. Parsley is one of the world’s most popular herbs, but it’s more than just a pretty face: two tablespoons of parsley contain 155.8% of your daily vitamin K needs. How’s that for nutrition packed?

Not only is it a vitamin K-powerhouse, but the volatile oils in parsley are so active that parsley qualifies as a “chemoprotective” food, or one that can help neutralize certain nasty carcinogens that come from things like cigarette and charcoal grill smoke.

But parsley in a sweet green smoothie? Will it taste weird? Will you rue the day you first laid eyes on this Herbal Green Smoothie column? Don’t be alarmed–the grassy, fresh taste of the herb pairs well with tropical fruits, and won’t overwhelm your taste-buds. You might not even know it’s there–but if you do, you’ll like it.

Mango-Chia-Parsley Green Smoothie

1 mango, fresh or frozen (Trader Joes has great frozen mango chunks)
1 frozen banana
1 handful fresh parsley
1 cup kale
generous spoonful of chia seeds
lemon to taste

Blend all ingredients, adding lemon juice until it’s just tart enough. Garnish with a sprig of parsley and a sprinkle of chia.

Pineapple-Avocado-Parsley Green Smoothie

1 cup fresh or frozen pineapple
1 frozen banana
1/4 ripe avocado (cover the rest in plastic wrap and keep in your fridge until your next smoothie craving hits)
1 handful fresh parsley
1 cup fresh spinach
Non-dairy milk

Blend all ingredients, drizzling in the milk until the smoothie reaches the consistency you want.
