We’re venturing into the realm of the bizarre with this Herbal Green Smoothie series, but believe it or not, dill–of fish-, chicken-, and cucumber-pairing fame–is up next. Yes, green smoothie fanatics will blend up just about anything to get their daily kale + fruit fix. But why should you care what these health nuts are slurping? What’s dill got to do with you?
A lot, if you’ll let it. Dill has potent antibacterial and antioxidant properties, as many herbs do, and like its green friend parsley, it qualifies as a “chemoprotective” food (meaning it can help neutralize carcinogens from smoke, etc.). It’s also a good source of calcium. Dill has been used in folk medicine for centuries as a method of calming headaches, aiding digestion, soothing upset stomachs, curing hiccups, and helping with insomnia.
Dill is a sweet, extremely flavorful herb, so it pairs well with fruit and delicate greens like baby spinach. Please note: a little goes a long way. These recipes are perfect for that wilting bunch of dill in the back of your fridge–you know, the one you bought to make that cucumber-dill yogurt sauce, and can’t think of anything else to use it with?
Strawberry-Dill Green Smoothie
1 cup frozen strawberries
1 frozen banana
3 springs fresh dill (about 1/4 bunch or less)
2 cups spinach or kale
Agave/honey to taste
Pineapple-Dill Green Smoothie
1 cup frozen pineapple
juice of 1 orange
3 springs fresh dill
2 cups baby spinach
