Fantastic Carrot-Mango Smoothie

I just invented the best thing ever. I refuse to perform a Google search to see if anyone has done this before, because I insist on taking all the credit. (That, children, is called despotism.) This is the brightest smoothie you will ever drink in your entire life–the thing is almost neon. It’s beautifully sweet and smooth, doesn’t have a speck of dairy or added sugar, and is basically the best immune-system booster you’ll find, besides watching Mad Men marathons in bed with a cup of lemon-honey tea. And did I mention how unbelievably easy the recipe is? This bad boy has a mere three ingredients and takes less than five minutes to whip up.

Nobody gives carrots enough credit for being sweet. Sure, they’re a vegetable–a root vegetable, at that–but they sweeten up juice just as much as an apple does. And one medium carrot contains over 200% of your daily requirement of vitamin A. A recent study in the Netherlands proved that carrot consumption reduces your risk of cardiovascular disease. Plus, they’re an incredibly affordable vegetable year-round.

Mangos are obviously on the more exotic end of the spectrum, but frozen mangos are usually pretty cheap, in my experience. And you’ll want frozen ones for this drink. One cup of mango has 76% of your daily vitamin C and 12% of your daily dose of dietary fiber. (Try saying that three times fast.)

Enough talk–this recipe is too delicious to wait.

Carrot-Mango Smoothie

  • 2 fresh carrots
  • 1 cup frozen mango chunks
  • 1 cup unsweetened almond or coconut milk

Wash your carrots and cut them into bite-sized chunks for easier blending. Toss them into your blender along with the non-dairy milk. Blend until the whole thing looks like this:

All that’s left is to add the mango and blend until smooth. Add more non-dairy milk or a little water until it reaches the consistency that you want.
