Are Artificial Colors bad for you? Learn the hidden side effects, like hyperactivity & migraines, behind Red Dye #40, Yellow #5, Yellow #6 and more!

Artificial colors are being added to a mind-blowing amount of food and other products to help create an aesthetically-pleasing color. While some of the coloring is created from beets or flowers, others are created chemically in a lab.

What are Artificial Colors?

Exempt Color Additives (aka “natural artificial colors”) are derived from plant, animal or mineral sources which have been processed in some way.

Examples of some Exempt Color Additives include vegetable juice and spices like paprika, turmeric and saffron. When these colors are in your products, they are not required to be specifically labeled and can be simply called, Artificial Coloring, Artificial Color Added, or Color Added.

Certifiable Color Additives (aka “artificial colors”) are derived from petroleum distillates or coal tars and are essentially synthetic chemicals created in laboratories. These 7 artificial colors are required to be specifically labeled on products and will read as Blue # 1, Blue #2, Green #3, Red #3, Red #40, Yellow #5, and Yellow #6. (Other acceptable ways for the label to read is simply “Red 40”)

It’s important to understand the “FD&C” on a label. In FD&C Red Dye #40, the “F” stands for food, the “D” stands for drugs and the “C” stands for cosmetics. If you see D&C Red Dye #3, that means it’s not approved for our food. So why would you ingest it with medicine?

Artificial colors are added in almost all our foods from dairy and cereal products to dressings, cakes, cookies, chips and beverages. It’s also added into our medicines and even vitamins. So make sure to read your labels!

The hidden dangers of Certifiable Color Additives

Blue #2 may cause asthma.

Green #3 has caused growth inhibition in rats. It’s prohibited in the European Union and other countries in food.

Those who have asthma and are allergic to aspirin have a high chance of being intolerant to Yellow #5. The side effects of this blend can include itching, hives, anxiety, headache, depression, blurred vision, rash, weakness, heat waves, runny nose, and sleep disturbances.

In children, it could cause obsessive compulsive disorder. It’s use is restricted in Austria and Germany and it’s banned in Norway.

Red #40, Red #3, Yellow #5, Yellow #6, and Blue #1 are linked to impulse control issues, attentiveness issues and hyperactivity (ADD & ADHD) in our children.

Red #40 can lower your child’s IQ and has been linked to sleep disorders.

Red #40 in adults can trigger migraines, give you an upset tummy and make you feel jittery.

Those who are allergic to aspirin can have an adverse reaction to Red #40 and Yellow #6, including rash, diarrhea and nausea.

Red #40 is so awful for us that it’s not recommended for our children in most countries in Europe. It’s 100% banned in Denmark, Belgium, France, Germany, Switzerland, Sweden, Austria, and Norway. It’s even banned now in hummingbird food.

Did you know that if Red #3 and #40 were sprayed on weeds it could act as a pesticide? The FDA is currently considering banning Red #3 because in large quantities, it has proven to cause cancer in lab rats, photosensitivity and birth defects.

Ginger is an amazing root with that doesn’t just sooth tummies. It’s also an anti-inflammatory that’s loaded with antioxidants, and has the power of pain relief. This juicing gem helps battle heart disease and can prevent strokes. Have you had your serving of ginger today? Here are 3 awesome juicing recipes!

During my pregnancies, I didn’t have Morning Sickness – I had All Day Sickness that lasted the entire nine months. There wasn’t much that would bring me relief, so I was willing to try anything and everything. This is when I discovered a little root called ginger.

You can find ginger root at your local supermarket or specialty store. It typically costs about $1.99 a pound and will survive for up to 3 weeks if stored in a plastic bag in your refrigerator.

To relive my nausea, I’d peel the root and slice a one inch chunk into 15 pieces, then boil the chunks in water for 30 minutes, and viola! I had a tea that settles the tummy. Little did I know that the power in ginger was oh so much more than it’s awesome soothing abilities.

What else can ginger do for you?

In addition to helping with nausea, ginger also relives bloating and gas!

Ginger contains antioxidants and phytochemicals. It’s a natural anti-inflammatory that helps arthritis, asthma, and even migraines.

In the battle against heart disease, it prevents cholesterol from oxidizing and lowers your LDL (lousy) cholesterol. Ginger also lowers your triglycerides, which are important as a mechanism for storing your unused calories.

Ginger helps prevent blood clots, which then lowers your risk of stroke and heart attack.

In the home, ginger is used to treat coughs, colds, and congestion. Ginger also acts as an antihistamine to help with allergies.

Ginger juice can also be used on snake bites. As a natural pain killer it provides immediate relief for tooth aches and minor burns!

The University of Minnesota conducted a study that found ginger may slow the growth of colorectal cancer cells (colon cancer).

A study conducted at the University of Michigan Comprehensive Cancer Center found that when ginger powder was applied to ovarian cancer cells it induced cell death.

Heartburn sufferers can find relief in the root. It also helps protect against ulcers and gall stones.

And ladies…ginger can help with those awful menstrual cramps!

Impressive, right? My husband calls it the miracle spice!

Juicing with ginger!

Ginger can be added to almost all your favorite juicing recipes! The daily recommendation is 5g, so I usually use recipes that call for 1 inch of ginger.

Kick start your morning with this simple recipe (pictured above):

8 medium Carrots

3 Apples

1 inch of Ginger

Remember to wash your fruits and veggies before juicing, especially fruits that have a wax coating – like apples. The ginger adds a nice finish to the juice and you’ll find yourself with a boost of energy!

Here is a yummy recipe that will also get you going. Literally.

3 medium Apples

3 large Pears

1 inch of ginger

This recipe is a mild laxative, so it’s great for regulating bowel movements.

For a sweet green juice, try this:

1 cucumber

1 carrot

1 green apple

1/4 cup parsley

1/4 cup mint

1 stalk of celery

1/2 inch ginger

1/2 lemon (peeled)

Cucumber is great for your skin and the celery is a natural diuretic, helping with the unwanted water weight!

Honey has been the stuff of legend, lore, and Gods - but these days, it's just a simple, tasty sweetener that easily outpaces sugar in terms of it's nutritional benefits and healthiness.

Honey: Liquid Gold

Honey, the stuff of legend and health-full-ness is the natural product of the labor of the honey bee. A great alternative to cane sugar, honey is nature’s own energy booster, immunity builder, and natural remedy.

Honey production is one of the ever-fascinating stories that unfolds in nature. Bees feast on the nectar from flowers. The nectar mixes with the enzymes in the bees’ saliva, and it’s this process that turns nectar into honey. The bees then take the honey back to the hive for storage and future feasting (for other honey bees, humans and enterprising bears, too).

Nutritional Benefits of Honey

Immuno Booster

Honey has both antioxidant and anti-bacterial properties that can keep the flora and fauna in your digestive tract humming along healthfully.

Morning Buzz: Mix 1 Tbs honey with juice from half a lemon in a cup of warm water and drink it down before breakfast. The morning buzz will have you full of vim and vigor throughout your day.

Improve Athletic Performance

A recent study concluded that the consumption of honey after an intense workout can help you maintain optimal blood sugar levels afterwards, and assist in muscle recovery and carbohydrate restoration.

The study included 39 male and female weight-trained athletes, of whom half consuming sugar after the workout while the rest consumed honey. Researchers also found those who ate honey post-workout were more prepared to workout again just as hard the next day. Honey, it seems, has a tonic effect on athletic endeavors.

Wound Healing

The wound healing properties of honey are not only legendary, but are also factual and reproducible. Honey has been used to treat ulcers, burns, and other wounds for eons.

A study in India measured the effects of honey vs. silver sulfadiazine (the conventional treatment) on 104 first-degree burn patients. After one week, 93% of silver sulfa-treated burns had become infected; compare that to 91% of honey-treated burns that were infection free. Additionally, the honey treated burns healed more rapidly.

Honey’s wound healing ability is attributed to honey’s chemical compound of glucose, fructose and antioxidant and flavonoid enzymes.

Antioxidant Health

Eating 1 to 4 tablespoons of honey a day “raises blood levels of protective antioxidant compounds in humans,” per a University of California study. Antioxidants, of course, help reduce the free radicals (cell destroyers) that ramble around in our bodies with the intent of mayhem.

High Cholesterol and Type 2 Diabetes

In a study comparing sugar, artificial sweeteners, and honey on patients with high cholesterol, honey came out the winner. Regular consumption of honey decreased total cholesterol levels by 8% and LDL by 11%.

The same study was done with patients who have type 2 diabetes. Natural honey causes a significantly lower rise in blood sugar than either cane sugar or artificial sweeteners.

Honey Lore

The practice of beekeeping or apiculture has been around since at least 700 BC.

Honey is been used as both food and medicinally throughout history. It has also been deemed a sacred food due to its divine sweetness.

As a sacred food, honey was given to the Gods in worship. And it was also used in Egypt to assist in the embalming process.

Olympic athletes of ancient cultures were required to eat honey (and figs) as a part of their diet to enhance their performance.

Honey Selection

Choosing the best honey for you is mostly a matter of taste, but can also be a matter of style and selection of process.

Honey Styles:

Honey Comb: pulled directly from the hive, with the honey still in the beeswax comb.

Liquid Honey: removal of the honey from the beeswax comb through the means of a honey extractor and the use of centrifugal force.

Chunk Honey: a combination of honeycomb and liquid honey.

Creamed Honey: a blend of granulated honey and liquid honey. The combination is cooled until it becomes firm.

Honey Bee and Comb

Honey Colors and Flavors

If the bee colony has abundant access to one kind of flower, then they will typically produce a honey that is ‘flavored’ with that essence. If no one flower predominates, then bees will produce a honey that is blended. Sometimes, honeys from multiple hives are blended by apiaries to create a specific flavor. There are over 300 types of honey available in the United States.

The color of honey also ranges upon the flower source, from colorless to dark brown; it simply depends on where the bees had buzzed. Typically, darker colored honey has a strong and distinctive flavor which lessens as the honey color lightens.

Some of the most widely produced and popular flavors include: alfalfa, buckwheat, clover, fireweed, orange blossom, sage, tupelo, and wildflower.

Processing

Honey that comes to your local grocer has often been processed to be in alignment with the FDA regulations (though these days, raw honey is now often more available, especially at your local apiary or famer’s market).

Pasteurized honey has been clarified or filtered.

Raw honey has not been pasteurized, clarified, or filtered.

Cleansing the colon is a great way to achieve optimum health. Take care of your digestive system and it will take care of you! Here's a cleansing recipe to drink at the turn of every new season.

With each new season, enjoying a colon cleanse is a great way to maintain good health.

Cleansing the colon is a fantastic way to purge toxins from the body. The cleansing also provides us with increased energy, a boosted immune system, and keeps us going strong as the weather changes.

The big three of colon cleansing fruits and veggies are carrots, apples, and cucumbers. Add a lemon for a liver tonic and you’re in cleansing and health business.

All Season Colon Cleanser

1 red apple

1 medium size carrot

½ medium size cucumber

1 stalk of celery

1 8oz glass of cold purified water

1 tbs of honey or agave or 1 tbs apple cider vinegar

Juice from one lemon

Juice the apple, carrot, celery, cucumber and lemon in the juicer. Slurry them together with the cold water. Add honey or agave to taste. Drink immediately, and preferably, do it first thing in the morning. Or alternatively, dice the veggies and fruits and mix this all up in your blender.

Veggie and Fruit Cleansing Benefits

Apple: The apple’s skin contains pectin which assists in the removal of toxin. Pectin also prohibits the protein matter in your G.I. tract from putrefying. Apples also help regulate blood sugar levels.

Carrot: Ease inflammation of the colon. Carrots contain beta-carotene, a great nutrient for the eyes.

Cucumber: Contains an enzyme called erepsin which digests protein. Cucumbers have a high water content which soothes and eases the digestive tract and colon.

Celery: Flushes the kidneys, liver, pancreas, and gallbladder.

Lemon: A natural antiseptic, the acidity of lemon juice destroys harmful bacteria

We all know that broccoli is a healthy addition to our diets, but did you know just how healthy? Here's a tasty broccoli/cucumber smoothie combo to kickstart your broccoli fix!

We all know that broccoli is a healthy addition to our diets, but do you know just how healthy? The nutritional benefits of broccoli abound. From fiber to all of the vitamins and minerals, broccoli is indeed a tasty treat and a winner.

Nutritional Benefits of Broccoli

Detox: broccoli helps the body detoxify with a special combination of 3 phytonutrients: glucoraphanin, gluconasturtiian, and glucobrassicin. These goodies support the detoxification process from activation, to neutralization and elimination. Broccoli helps to control the detoxification process at a genetic level.

Vitamin A and K for Vitamin D: this green goddess of a food has more than ample amounts of both of these vitamins. At over 194% of the daily value of K and 45% of A, the combination of these two help the metabolism balance of Vitamin D. For those with a Vitamin D deficiency (which research finds is just about everyone), including broccoli in your diet will help you retain this vital vitamin.

Anti-Allergen / Anti-Inflammatory: as a rich source of kaempferol (a flavanoid), broccoli assists in reducing the impact of allergens on the body. This in turn gives broccoli unique anti-inflammatory properties.

Antioxidant: broccoli is a leader in amongst cruciferous vegetables for its concentration of Vitamin C. As an antioxidant, Vitamin C provides long-term support of oxygen metabolism when accompanied by recycler flavanoids – which of course are also contained in this vibrant green package. Other antioxidants that broccoli provides are Vitamin E, manganese, and zinc.

Heart Health: the spectrum of B vitamins in broccoli contributes to a healthy heart. Broccoli’s concentration of folate, B6, and the other B-complex vitamins fights the formation of homocysteines which increases our risk of atherosclerosis, stroke, and heart attack.

Stomach Health: eating raw broccoli and broccoli sprouts is a great treat for your stomach and stomach lining. Broccoli assists in the reduction of a bacterium called heliobacter pylori. When this bacterium overgrows it causes G.I. upset. Broccoli (especially raw broccoli) helps to keep this bacterium in check. This is due to broccoli’s high glucosinolate content which focuses directly on the stomach lining cells.

Low in Calories: 1 cup of broccoli is only 44 calories while the health benefits are endless.

How did broccoli come to be?

Broccoli was developed from a wild cabbage in ancient Rome. In Italian, broccolo, means “cabbage sprout.” This green goodness traveled to the Near East and then back to Italy for further cultivation. Italian immigrants brought broccoli to the New World.

Selection and Storage of broccoli

Choose broccoli with florets in tight, compact clusters. The floret clusters should have a uniform color ranging from dark green, sage, or purple-green. If the floret clusters are yellow or if there are any yellow flowers blossoming, the broccoli is overripe. Stalks and stems should be firm.

Store in a refrigerated plastic bag with as much air removed as possible. Broccoli will keep for about 10 days. It’s best not to precut nor wash broccoli before storage, as it causes the Vitamin C will degrade.

Green Broccoli Machine Smoothie

1 cucumber

3 -5 broccoli florets

1 kiwi (peeled and frozen)

1 bunch of green grapes (frozen)

Ice and water

Click here for the health benefits and additional recipes for cucumbers.

Juice the cucumber and broccoli. Place in a blender, add the fruit, ice, and water. Enjoy!

I’ve always been a multi-tasker, but recently have found myself forgetting things and muti-tasking has become more difficult. The other day I walked down two flights of stairs to get something in the basement. Once down there, I put what I needed on a shelf and started another quick project in the basement. A few minutes later I walked back up the two flights of stairs and sat at my desk only to discover I had forgotten what I went into the basement for! The books were still sitting on the shelf in the basement! Now I understand this could be great exercise, but REALLY? I spoke with my friend who said she was suffering from the same thing and was starting to get worried about it. Then we forgot what we were talking about and went on to the next subject.

I’ve written before about some symptoms of menopause and since I’ve started to have a few more myself, thought I’d catch you up on some more natural alternatives. My hot flashes lasted (so far) a month or so. Every day and night. I try to drink some sort of smoothie every day and I always add ground flax. I feel much better and recently read that flaxseed is a super-food and can help with menopause symptoms. Women used flaxseed in ancient Babylon 5,000 years ago. Greek physician Hippocrates recommended it back in 400 B.C. Flaxseed contains compounds called lignans, which mimic hormones without the harmful side effects. These lignans may, in fact, prevent both breast cancer and colon cancer. This seed is commonly used as a laxative. Another benefit! Flaxseed and flaxseed oil have both been used to reduce total blood cholesterol and LDL (bad) cholesterol levels. The result? The reduction of the risk of heart disease. Flaxseed oil is great too. I sometimes put that in my green smoothies, however it doesn’t have the fiber that the seeds have. You can buy whole seed in your store and grind it in a coffee grinder or seed grinder. Be sure to store it in a glass, air tight container in your fridge to extend the life of your seed. Also, grind only what you need if you can. It will turn rancid more quickly in its ground form.

Flaxseed can be added to any smoothie; green, chocolate or fruit. You can add this super food on top of your fresh fruit, in your oatmeal, cereal or on your yogurt. Be sure to use ground flaxseed. Nutrition experts agree that ground flaxseed is better. Whole flaxseed may pass through your intestines undigested. This means you won’t get all the health benefits. So grind it up girls. Here’s what Ameriflax says about substituting flax in your recipes:

Substitutions in Recipes

For Fat
– Substitute flax for fat in your recipes, using 3 tbsp ground flax seed for 1 tbsp of margarine, butter or cooking oil. Flax can be substituted for all or some of the fat, depending on the recipe. Note that baking with flax, as fat substitute will cause baked goods to brown more quickly.

For Eggs
– Substitute a ground flax seed/water mixture for eggs in recipes such as pancakes, muffins and cookies. Use 1 tbsp ground flax plus 3 tbsp water – left sitting for several minutes – for each egg. Note that this will result in a chewier version of the recipe, with less volume.

And then there’s your skin. Hormones can wreak havoc on your skin. I’ve started to notice my skin becoming thinner and it feels different on my face. Sure enough, hormonal deficits associated with menopause, will start to change the skin. Women, during their 30′s, begin to produce lower hormone levels. The symptoms of this do not usually begin to appear until her 40′s. This is the stage called perimenopause. I wish I started some things before this time. I’m here telling you this so you can! At menopause, women experience a drop in three hormones: estrogen, progestin and follicle stimulating hormone. The loss of estrogen has the most significant effect on the skin. The amount of collagen and elastin in the subdermis breaks down and gradually declines, blood supply decreases, and the dermis thins. This has also affected the strength in my wrists. And the results of all of this please? Dry dull skin, changes in texture and pore size, and additional lines and wrinkles. Thanks.

There are also changes in skin tone. More freckles or patches on the cheeks and/or around the mouth. Your pigment cells decrease by about 10% every decade after the age of 30 and with menopause, women begin to see irregular pigmentation. Estrogen promotes the permeability of blood vessels and the loss of that hormone can cause blood vessels to stiffen and break, which can create broken capillaries. Hot flashes will cause further damage.

Here are some key ingredients to look for in your skin care products (you may want to begin treatments before the symptoms start):

Peptides - These are bulky molecules made up of amino acids each with specific skin functions. Palmitoyl pentapeptide stimulates collagen and elastin formation. Argireline helps prevent wrinkles caused by muscular contractions. Oligopeptide 34 helps combat irregular pigmentation.

Pytoestrogens – These naturally occuring plant compounds possess estrogen-like qualities.

Retinoids – Vitamin A in the form of retinol or retinoic acid, improves skin elasticity, re-texturizes and helps reverse photodamage and enhance new cell growth. Retinol is one of the few skin care ingredients to be scientifically studied and proven in clinical trials.

Moisturizers - Dehydration is the number one skin problem (This is really noticeable on me, even though I drink ALOT). Look for high powered humectants and emollients, such as: sodium hyaluronate, shea butter, vitamin E, natural oils, squalene and ceramides, in your moisturizers.

Skin, after menopause, will continue to degenerate. Your skin could lose up to 30% of its collagen in the first five years of menopause.

Take the time now to replenish your skin, before menopause. I’m learning and guess what I did yesterday? That’s right, I looked for moisturizers!

The juicing craze! After all of the hype and strict regimens of the raw and juiced diet fads, the whole idea may leave a bad taste in your mouth. But you do not have to learn how to cover up the taste of juiced beets or start watching infomercials with Jack LaLanne revving up his “Juice Tiger.” There is an easy, and yes, tasty way to drink your vitamins and boost your intake of the good stuff.

For starters, you may be wondering why juiced foods are so fantastic to begin with. Simply put, it’s because they are living, unprocessed foods that enter your body in their purest form, with their vitamins and nutrients intact. When you drink a glass of fruit juice from the bottle, you are most likely getting additives and additional sugar to enhance the flavor and appeal. The problem here is that you could have downed a soda if you wanted empty calories, and all for a fraction of the nutrients you could have received if you stuck to au-natural. So great. Now you know you can toss your fruits and veggies into a blender and delicious, nutritious nectar will appear, solving all of your ache and pains, as well as restoring your body to age 21 perfection. Not quite. The concoction you get might taste a bit more like a punishment than a treat. But comparing the thick, amateur juice of a novice to the real deal is like comparing apples to oranges. In order to get into your body, it’s got to taste good. So how do we get from bravery to savory?

First of all, start with what you know. What fruits do you like? Bananas make a fantastic “base” fruit, and your body will thank you for the potassium, not to mention the gram of protein and three grams of fiber. Bananas also tend to help neutralize the tartness of some fruits, so it can be a nice place to start. Not bananas over bananas? No problem! After a few tries at the old blender, you’ll figure out which fruit combination you like best. But what about veggies? How do we make that taste good? Well, right off the bat you will want a fairly decent juicer. Introducing veggies into your juice regimen is going to require a bit more “juice” than a typical blender can pack. But even when you’re armed with the right equipment, certain vegetables need some help from that spoonful of something to help the medicine go down. Your sweeter fruits and vegetables (pineapple, carrots, etc.) can also be used as a moderator to help tone down the all too unpleasant overpowering vegetable taste. Tomato and celery with a pinch of lemon juice makes a great foundation juice, as most people tend to like this health conscious knock off of a Bloody Mary. From here you can add cucumber, spices, carrots, or even a bit of apple juice.

Ok. So you have read this blog, dusted off your juicer (or purchased one), made a resolution, and now you are standing in the produce aisle at Grocer’s Gala and have not a clue what to buy, or why you even wanted to try this in the first place. Before you resign and head over to aisle five to pick up a jug of V8, hear me out. Grab a piece of paper and quickly jot down some health issues that you have that you want to resolve. Next, log on to the internet and do a quick Google search to learn which vitamins serve as an anecdote to your problem. As an example, if you suffer from fatigue than you may be lacking vitamins B12 and B6. Mangos and Kiwi’s have each of these B’s, so get them on your list. Is the common cold a little too common for your comfort level? Well than I am sure you are aware that vitamin C is key. Stock up on your friends in the citrus family. Have you noticed that you are squinting at the menu at your local fast food joint? Than stop eating burgers and fries and pick up some carrots! Carrots are loaded with beta-carotene, which morphs into vitamin A, which gets an A+ when it comes to your eyes. Have allergies? Try Mandarin Tangerines. Upset stomach? Pick up some pectin and grab some grapefruit. You may have to search a bit, but some Noni juice added to your blend can act quite like serotonin on your brain, and some believe it can relieve headaches. Aloe and cabbage have been rumored to do the same, and as you experiment you will find what works best for you.

So you have the idea. Now you have your fruits and veggies at home and you are ready to juice! As you are playing scientist and experimenting, remember to balance your sweets with your not-so-sweets and see what you can get. If you do not mind wandering off the beaten path every now and again, start trying fun additions like cinnamon, maple syrup, parsnip, or other spices. Juicers note: The natural sugar in fruit will raise insulin levels, so keep this in mind when you head into juicing mode. Too much of the sweet stuff can upset your blood sugar levels, causing you to feel hungry too soon. No worries, though. Soon you will have your “recipes” down, just keep experimenting and tasting.

One final note. “Smoothies,” although not as healthful as the juices we discussed above, can be an excellent alternative to typical desserts laden with fat and excess sugar. Dessert smoothies can end up containing a lot of calories, but watching your portion size can be the perfect way to treat your sweet tooth without trying to trick your diet. One of my special blends uses chocolate soymilk as a base. I then add a banana and a few tablespoons of organic, vanilla yogurt. Divide in two glasses and you and the person lucky enough to be dining with you are in for a “milkshake” that won’t leave you with a twist of guilt.

So go forth and juice! Your mind and body will thank you.

Celiac disease is an autoimmune disease. The lining of the small intestine is damaged from eating gluten and other proteins found in rye, barley, wheat and oats. Some gastrointestinal symptoms are abdominal pain, bloating, gas and indigestion, constipation, diarrhea, lactose intolerance, nausea, vomiting, and weight loss. There are also nonintestinal symptoms like: anemia, bone and joint pain, easy bruising, depression, fatigue, hair loss, skin disorders, seizures and malnutrition. Symptoms can vary significantly from person to person. Unfortunately a lot of these symptoms can mean a host of other disorders too.

Celiac disease is also known as gluten sensitive enteropathy. Gluten makes bread doughy and sticky. Gluten is also used as an adhesive on stamps. It is found in grains such as wheat (not in wheatgrass juice), rye, spelt, barley, kamut, triticale, semolina and durham, but not in oats (although oats are often grown on former wheat fields causing cross contamination). In celiac disease the immune system begins to produce antibodies when exposed to gluten. These antibodies attack the fingerlike projections (microvilli) which line our small intestines. This is where we absorb the nutrients for our body. When these microvilli are attacked and destroyed, the body is unable to nourish itself with vitamins, minerals, proteins, carbohydrates and fats. The list of dis-eases associated with celiac are too many to list; from asthma to multiple sclerosis. If you already have a known autoimmune disease, you could be at risk for developing celiac disease. Someone can become sensitized to gluten at any time of life. It also runs in families and women are more affected than men. There is no exact cause of celiac, making it impossible to prevent. However, we already know it is healthier for every part of your body to stay away from processed foods.

Wheat as a raw grain is unsafe to eat. Wheat flour must be heated to destroy the enzyme blockers and lectins within the grain to allow for its consumption. Anytime we alter food from its original nature state we are processing the food. Some healthy alternatives to wheat are quinoa and brown rice which are much less processed. The aisles of the grocery store are now stocked with gluten-free alternatives. I just picked up some gluten-free pretzels, which someone told me are better than regular pretzels. I also love the gluten-free fig cookies.

Eating a gluten-free diet will allow the intestinal villi to heal. Read food labels and medication labels carefully. Hidden sources of grains, wheat, barley, rye and possibly oats, are found in many products. If you have some of these symptoms and you feel better if you do not eat gluten, please contact your doctor. Being tested is the only way to diagnose this disease. I have stomach issues when I eat gluten and when I’m under stress at the same time. Other times, I fine. I try to stay away from processed foods. Left untreated, celiac can cause chronic inflammation eventually causing complete atrophy and flattening of the microvilli.

Gluten can also impact the brain. When a patient has full blown celiac it can cause chronic inflammation of the brain and nervous system which will impact function of these systems. Gluten also contains glutamate. This substance causes excessive excitation of brain cells which ultimately results in brain cell damage and brain cell death.

We need to protect the body with proper nutrition, exercise, relaxation and give the body what it needs to properly get rid of offending foods, toxins and microbes it does not need. I’ve said many times the body has the ability to heal itself. We’ve been eating unhealthy for many years, we can not expect healing to happen overnight. New and improved versions of gluten make it harder and harder for our bodies to fight infection, inflammation and disease. We need to return to a diet full of nutrients that promote health and longevity and prevent dis-ease. Gluten is responsible for so many symptoms, that I believe taking gluten out of our diets can only benefit us.

In these times when we are hearing so much about swine flu, I thought I’d add my two cents regarding how I feel about the rumors and the lies being told. To be honest, I don’t know which are lies and what is the truth about this issue. I DO KNOW this, it is possible to protect and promote good health. I also know that I have set a plan with my daughter in college just in case “they” come around and start requiring immunizations at her school (that’s not from a fear standpoint…that’s just common sense). I will share some things I’ve heard about the flu and what I know as the truth about keeping your body in balance. I’m sure you will make your own informed decision regarding this. Swine flu is going around at my daughter’s college. It just started this week (9/9). There are signs all over campus. They are keeping up on it, however another college in her town just had one death from swine flu. This person had underlying circumstances. The college tell you to stay at least six feet away from your roomate and stay in your room until 24 hours after you’ve had a fever. It is important now, more than ever, to boost your body’s immune system.

I’ve read that even if you believe the so-called vaccine will work, it would take vaccinating 200,000 people to prevent the death of just one person from swine flu. And if that many people were vaccinated, chances are there would be death or harm from the side effects. In addition, this vaccine has never been subjected to any long-term testing. I’m writing this blog to make you aware of some things you can do now to boost your health, not just during flu season. I do believe in washing your hands. I do believe in (actually I’m a little anal about) the anti-bacterial hand sanitizers. There is a natural hand sanitizer named Hand Sanz, available in health food stores. It kills 99.9% of germs and bacteria without chemicals. It can be used anywhere without water. I’m not a hand shaker during this season and yes, I use the wipes when I go to the grocery store and wipe my cart. Again, to me, that’s just common sense. And no, I won’t be getting the swine flu vaccine and I’m hoping my daughter isn’t forced into one either. I’ve never gotten any flu vaccine.

So what can you do or not do? Donald Miller, MD, says “Seventy percent of doctors do not get a flu shot.” According to Cochrane Database Syst. “There is also a lack of evidence that young children benefit from flu shots. A systematic review of 51 studies involving 260,000 children age 6 to 23 months found no evidence that the flu vaccine is any more effective than a placebo.” Flu shots contain mercury (a neurotoxin), formaldehyde (known cancer-causing agent), aluminum (may cause Alzheimer’s), and other additives known to be toxic. Vitamin D deficiency is likely one cause of flu, pneumonia and cardiovascular disease.

Msn.com states “Antibiotics are among the most frequently prescribed medications in modern medicine. Antibiotics cure disease by killing or injuring bacteria.” When one type of bacteria flourishes it causes an imbalance. This imbalance can occur from taking a course of antibiotic medication, which will attack the good bacteria in your intestines as well as the bad. Yogurt (dairy or soy or rice), has good bacteria. Many yogurts are supplemented with additional probiotics that are associated with health benefits. A daily dose of yogurt can help with resulting stomach issues. Yogurt is also good for those suffering from digestive problems such as irritable bowel, gas and bloating. Yogurt is a great source of calcium, protein and vitamins. I use soy yogurt and avoid the presweetened and flavored varieties, which have added sugars and are higher in calories. You can add fresh fruit or granola to sweeten it up naturally or add to your favorite smoothie. Probiotics are not tested or regulated by the FDA but are recognized as safe. Avoid anything with bacillus or enterococci on the label. Keeping a healthy bacteria environment in your body is a great start in overall health and avoiding colds and flus too.

Keep up with your vitamin C intake and stay well rested. I also like Airborne. I usually take it at night if I’m feeling exhausted and like I’m starting to come down with something. Eat more raw food. Enzymes in raw food will benefit you in more ways than you can imagine. Yesterday I woke up with a horrible headache. I’ve never had a migraine, but this headache was horrible. It lasted through the day and I started feeling very achy in the evening. I went to bed and wondered what was happening? I immediately did some EFT(Emotional Freedom Techniques) and felt better immediately! Remember, you are in charge of your health.

Stay healthy. Think healthy. Eat healthy.

I’ve mentioned many times in this venue how raw, living food is what will allow the body to heal. Not cooking your food keeps enzymes, oxygen and water content in your food, and therefore making it better able for your body to absorb. Heating destroys nutrients and your food’s enzymes. Heating also destroys water soluble vitamins like vitamin C and all the B vitamins. I still eat a small amount of cooked food, but it just doesn’t taste the same anymore. I’m eating more vegan food as well as high raw foods. The past couple of weeks, since I’ve been moving around a lot, I’ve had a cucumber for breakfast almost every day. I know vegetables for breakfast? Yes, and you can too. It’s all about changing your patterns. Fresh organic produce has been easy to find these days. I am in the Adirondacks in New York State taking advantage of the local farmers markets every week.

If you want to get good at anything, you have to focus, learn and invest some time in learning how it works, right? Everyone needs to learn about taking care of their body because everyone has a body. In addtion to your “day job”, you need to make the time to learn the basics of taking care of your body. The reason we believe what the drug companies, media, agricultural and food and beverage companies have to say is because we are nutritionally ignorant. So let’s learn a little bit more about the food we cook on a daily basis.

When you cook food on a grill, stove top, oven, camp fire or a microwave, you are changing the molecular structure of the food and change the nutritional content and digestibility. This structure becomes denatured, deranged and degraded, and the molecules are changed into new chemical configurations and carcinogenic byproducts are formed, thereby promoting a broad spectrum of allergies, infections and degenerative diseases.. Certainly the degree to which this happens depends on the cooking time, temperature and method of cooking. Heating food above 105-120 degrees F, destroys all enzymes and lowers the concentration of vitamins and minerals. You body can produce the enzymes necessary for digestion and absorption of food, however this process requires a great deal of energy that would otherwise be used for the process of elimination, fighting disease, and allowing you to function at an optimal physical and mental level.

In cooked foods, fats are carcinogenized, carbs are caramelized, and proteins are coagulated and become virtually unusable by the body and fiber becomes barely usable in the colon. Heating food also creates toxic byproducts. Here’s a few of these dangerous byproducts:

Acrylamides: Cancer causing byproducts of cooking carbohydrate food such as breads, potatoes, pastries and any other kinds of starch. The FDA acknowledges on their website the perils of acrylamides, but the processed and fast food industry would rather you don’t know about these.

Epoxides, Hydroperoxides, unsaturated aldehydes: These three are generated when you cook the fat from meat, milk, eggs and fish. From Wikipedia, “An epoxide is a cyclic ether.” The rest of the definition on Wikipedia was not even understandable to me.

Furfural/furans: generated when sugars are heated. Wikipedia states, “Except for occasional use in perfume, furfural remained a relatively obscure chemical until 1922, when the Quaker Oats Company began mass-producing it from oat hulls….When heated above 250 degrees, furfural decomposes into furan and carbon monoxide, sometimes explosively… Furfural is also used as a solvent in petrochemical refining….”

Nitrosamines: When nitrogen oxides in the gas flame from gas ovens or barbecues interact with fats, these toxins are created. Nitrosamines are chemical compounds of a chemical structure, some of which are carcinogenic.

Polycyclic Hydrocarbons: These carcinogens are generated from the charring of meat. From Wikipedia, ”PAHs occur in oil, coal and tar deposits, and are produced as byproducts of fuel burning….as a pollutant, they are of concern because some compounds have been identified as carcinogenic, mutagenic, and teratogenic….PAHs are also found in foods. Studies have shown that most food intake of PAHs comes from cereals, oils and fats. Smaller intakes come from vegetables and cooked meats.”

Hydrogenated oils and Trans fats: These are man-made. They are also called hydrogenated or partially hydrogenated fats and were specifically developed to allow processed foods to sit on the shelf longer without going rancid. Many of today’s common foods are now cooked in these trans fats. Consuming these fats can lead to obesity, heart disease, an increase in bad cholesterol and lowering of the good. Also keep in mind when you heat common cooking oils, the heat denatures the oil molecule and causes the oil to turn rancid.

Are you still asking yourself what happens to you if you eat cooked foods? Digestive leukocytes is a term that refering to when your body produces an increase of white blood cells, indicating the body is on the attack. This response also happens when you eat cooked food. However it does not happen when you eat raw foods. A build up of toxic, acidic waste materials, often referred to as “free radicals”, accumulates in the skin, liver, nervous system and brain when you consume large amounts of cooked food. When you don’t get the proper nutrients in your diet, your white blood cells are always on the attack mode. Toxic waste are circulating in your weak and overworked body, allowing it to breed common ailments such as allergies, headaches, sinusitis, diabetes, heart disease, erectile dysfunction, depression, arthritis, osteoporosis, and various cancers will thrive. Unfriendly flora build-up is also a byproduct of cooked foods. Unfriendly bacteria take over the colon, feeding on thick, undigested and uneliminated cooked food putrefying in the intestines. This flora will give off a waste product that is a food for cancer cells. Eating a plant based uncooked diet will decrease the toxic load on the colon and will also decrease unfriendly bacteria and its dangerous byproducts.

Not cooking your food will have the following benefits: Weight stabilization, increased energy, more restful sleep, radiant skin, enhanced mental clarity, increased immune function and prevention of illness. You don’t need to eliminate all cooked food from your diet to have these benefits. How about just substituting one meal a day with raw food for starters? Or if you are already doing that, how about increasing to one day a week eating nothing but uncooked food? Most people believe lunch or dinner is their best bet for raw. Large salads with every veggie in the fridge, juicing a meal or sandwiches with sprouted grain bread (these breads are usually available in the frozen section. They are baked at low temperatures to retain the nutritional content of their ingredients). Top your sandwich with all raw ingredients, like veggies and sprouts. It doesn’t have to be fancy, just make it colorful.

Be proactive about your own health. Stay informed. It’s your job.

As always, consult your primary physician if you have questions regarding your specific circumstances.
